stuffed peppers

Stuffed Bell Peppers

  • Ingredients 
    • Ground Chicken
    • 3-4 Bell Peppers
    • 1 cup of rice
    • Onion
    • Carrots
    • Diced Tomatoes 
    • Shredded Cheese 
    • Garlic Powder 
    • Butter - 2 tsp 
    • Seasoning Salt - 2 tbsp
    • Black Pepper- 1 tbsp
    • Ginger Powder - 1 tsp 
    • Liquid Seasoning 
    • Scotch Bonnet Pepper (optional) 

     

  • Directions
    1. Wash all produce and chop onion, carrots, ginger and 1 bell pepper. 
    2. Cut off the tops of the peppers, remove seed and clear the insides. 
    3. Bake peppers at 350 for 10-15 mins, Turn your peppers upside down so the smooth side is flat. 
    4. Melt butter in saute pan and add onion, garlic, and a half carrot, Stir / Mix for 2 mins. 
    5. Add the Bell pepper, half carrot, and season your food in the pan. 
    6. Season your chicken, add to pan with the rest of the veggies and add liquid seasoning to your taste. 
    7. Add diced tomatoes or sauce then mix in cooked rice and cheese. 
    8. Taste the filling and stuff pepper boats. 
    9. Top Peppers with additional cheese and bake for 5-6 minutes. 
    10. Broil for 2-3 minutes for brown finish. 
    11. Enjoy!

Zucchini Harvest Soup 

  • Ingredients
    • 1 Medium Zucchini 
    • 2 Potatoes (peeled) 
    • Frozen or Canned Corn 
    • 1/2 cup Diced Onion
    • 1/2 cup Carrot
    • 1/2 cup Celery
    • 1 can of tomatoes 
    • 1 garlic clove 
    • Cilantro 
    • Veggie Broth
    • Olive Oil 
    • Your Choice of Seasonings:
      • Garlic Powder
      • Onion Powder 
      • Cayenne Pepper 
      • Salt and Pepper etc...

     

  • Directions
    1. After washing your vegetables, add your diced onion and garlic to a pot with cayenne pepper and olive oil and saute 3-4 mins. 
    2. Add chopped zucchini and potatoes in the pot and mix well. 
    3. Add water or chicken broth along with all seasonings and bring to a rolling boil for apx 10 minutes. 
    4. Reduce to a medium heat and add corn, parsley, and canned tomatoes. 
    5. Let cook on medium heat for 7-10 mins 
    6. Let cool and Enjoy!

Homemade Chicken Noodle Soup 

  • Ingredients
    • 1 Medium Zucchini 
    • 2 Potatoes (peeled)

    • 1 can of tomatoes

      • Onion Powder 
      • Cayenne Pepper 
      • Salt and Pepper etc...

Southern Red Beans and Rice

  • Ingredients
    • 2 cans of Red Beans
    • 1lb of Smoked Sausage
    • 1 tsp of Black Pepper
    • 2 tbs Olive Oil
    • 1 tbs Butter
    • 1/4 green pepper
    • 1 tsp of minced Garlic
    • 1 tsp Chicken Base
    • 2.5 cups Chicken Broth
    • 2 Bay leaves
    • 1 tsp of Crab boil *optional*
    • 1 tsp of Cayenne, Pepper, Oregano
    • Chopped Parsley
  • Directions
    1. In a pot over medium heat, add olive oil and sliced sausage. Cook sausage for apx. 10 minutes or until crispy. 
    2. Remove the sausage from the pot and add butter, celery, onions, peppers and minced garlic. Sautee all vegetables for apx 3-5 minutes. 
    3. Add chicken base and chicken broth and boil for 3-5 minutes.
    4. Add canned beans, bay leaves, cayenne pepper, black pepper, and thyme. Let cook for 3-5 minutes. 
    5. Once everything is combined cook on medium to low heat until desired thickness is reached.
    6. Re-add cooked sausage and cook for additional 2-3 mins. Top with chopped parsley and Enjoy!
